- Add the cumin seeds and saute
- Toss in the curry leaves and give it a quick stir (tadka style)
- (after drinking up the crackling sound of curry leaves in oil:-) ) add 5 to 6 cups water and boil
- Once the water gets hot, add in the jaggery, red chilli powder, turmeric powder, tamarind paste and stir well
- Heat on low flame till everything dissolves and half cooks... 2 mins
- Finally, peel the two small mangoes and throw the peel aside and add the mango with pulp to the boiled water
- you may want to add a bit of Mango essence to it... I added a tablespoon of Maazaa :-)
- You can reduce the amount of water if you want it thick. this goes very well with any rice and dal dish, or even just as soup. The real fun is sucking out the hot and sweet marinated mangoes!! :-)
